Werkwijze na koken:
1 - 5 minuten laten bezinken.
2 - Beginnen met au-bin-marie koelen
3 - Na 5 minuten (= 10 minuten na vlamuit) of 80 graden alle hop verwijderen.
4 - Doorkoelen tot 20 graden.
5 - Whirlpool en hevelen.

Opmerking van Edith: de wort ruikt naar Speciale 1900.

De S33 gist werkt niet goed met dit recept, SVG 70%. Smaakt waterig voor het bottelen. Uiteindelijk wordt dit 4,9% op fles. OG moet omhoog voor de volgende.

Gebotteld: 22 x 0.33 flesjes, witte dop.

De opmerkingen hieronder zijn voor volgende versies.

CaraMunich vervangen door CaraBelge (Weyerman).

Eventueel met Cascade drooghoppen. 7 dagen laatste gisting bij 20 graden. Ca 15 .. 30 gram.

Testen in de Koninck bieren dmv drooghoppen. Ca 0,2 gram == 6 gram op batch. Maar omdat er geen 5 minuten kook bijzit, mag het iets meer zijn. Flesje gevuld 10-9-2014.

15-09 geproefd. Veel te veel hop maar dat is bijna onmogelijk goed te doen. Niet echt vies maar overdone. Conclusie: gewoon late extra hop bij koken volgens plan recept:

24 gram Saaz bitterhop
6 gram Saaz 10 minuten
6 gram Saaz 5 minuten
6 gram Cascade 5 minuten.

Zonder koelspiraal duurt dit lang genoeg. Bitterhop wel verwijderen tijdens koelen.


Andere opmerking: de chocolademout steepen in de boil, 10 minuten voor het einde. In een hopzak?
Beter voor de smaak en maischen is niet nodige met deze mout.

Procedure 1: 25 * 1.5 gram geplette mout in 100 ml water laten weken. Het gezeefde extract 10 minuten voor het eind aan de kook toevoegen.

Procedure 2: 25 gram geschrote mout toevoegen op het einde van de maisch en goed roeren. Daarna beginnen met filteren en spoelen. Voor berekeningen doe alsof het volledig meemaished.
